Homemade ginger ale

Instructions

  1. Make ginger syrup. Simmer ginger, sugar, and water for 20 minutes. Cool and strain.
  2. Mix. Stir lime juice into the syrup.
  3. Serve. Add 1/4 cup syrup to each ice-filled glass and top with sparkling water.

Hosting tip: For kids, use half the syrup per glass. Fresh ginger is spicier than store-bought ginger ale.

Make it ahead

Ginger syrup keeps 2 weeks in the fridge.
