Instructions

  1. Soften. Simmer tamarind pulp in 4 cups water for 10 minutes, breaking it up.
  2. Strain. Press through a strainer to remove fibers.
  3. Mix. Add sugar and remaining water and stir until dissolved.
  4. Serve. Chill and pour over ice.

Hosting tip: Seedless tamarind blocks are in the Latin or Asian aisle. A chili-salt rim is traditional.
