Tamarind cooler
Agua de tamarindo: sweet, sour, and earthy. A favorite at Mexican taquerias.

Instructions
- Soften. Simmer tamarind pulp in 4 cups water for 10 minutes, breaking it up.
- Strain. Press through a strainer to remove fibers.
- Mix. Add sugar and remaining water and stir until dissolved.
- Serve. Chill and pour over ice.
Hosting tip: Seedless tamarind blocks are in the Latin or Asian aisle. A chili-salt rim is traditional.
