Tom Collins mocktail
Tart lemon, a little sweetness, and lots of bubbles. One of the simplest batch drinks you can make.

Instructions
- Mix the base. Stir the lemon juice and simple syrup together and chill.
- Fill glasses. Add 3 tablespoons of the base to each ice-filled glass.
- Top. Fill with club soda and stir gently. Garnish with a lemon wheel and cherry.
Hosting tip: A splash of non-alcoholic gin alternative turns this into a closer copy of the original.

Mix everything except soda and ice up to 8 hours ahead and refrigerate.
