Tart lemon, a little sweetness, and lots of bubbles. One of the simplest batch drinks you can make.

Tom Collins mocktail

Instructions

  1. Mix the base. Stir the lemon juice and simple syrup together and chill.
  2. Fill glasses. Add 3 tablespoons of the base to each ice-filled glass.
  3. Top. Fill with club soda and stir gently. Garnish with a lemon wheel and cherry.

Hosting tip: A splash of non-alcoholic gin alternative turns this into a closer copy of the original.

Make it ahead

Mix everything except soda and ice up to 8 hours ahead and refrigerate.
