Virgin mojito
All the mint and lime of a mojito, made by the pitcher. Muddling the mint with the syrup pulls out the most flavor.

Instructions
- Muddle. In a large pitcher, press the mint leaves into the simple syrup with a muddler or wooden spoon until fragrant.
- Add lime. Stir in the lime juice and lime wedges.
- Top with soda. Add ice to the pitcher, pour in the club soda, and stir gently once.
- Serve. Pour into ice-filled glasses and garnish with a mint sprig.
Hosting tip: Slap each mint sprig between your palms before garnishing. It releases the aroma right under each guest's nose.
Make it ahead
Muddle the mint, syrup, and lime up to 4 hours ahead and refrigerate. Add soda and ice only at serving time.
Variations
Add 1 cup muddled strawberries or raspberries for a berry mojito, or swap half the soda for coconut water.
