Lavender lemon spritz

Instructions

  1. Make lavender syrup. Simmer sugar and water until dissolved. Add lavender, steep 15 minutes, strain, and chill.
  2. Mix. Stir the syrup and lemon juice together.
  3. Top. Add sparkling water just before serving.
  4. Serve. Pour over ice and garnish with a lemon wheel.

Hosting tip: Use only culinary lavender. Too much tastes soapy, so steep 15 minutes and no longer.

Make it ahead

Lavender syrup keeps 2 weeks in the fridge.

Questions

How do I keep it fizzy at a party?

Keep the base and the bubbles separate. Put the base in a dispenser and the sparkling water on ice beside it, so each glass gets fresh fizz.

Can I make it for more people?

Yes. Use the servings button next to the ingredients. Every amount updates automatically, from 1 glass up to 200.
